I don't have that model Pit Boss but I have the 820D model. The stock controller was the same as what you are describing. It went from a 250 setting then the next setting was 300. The P settings only really help you in the smoke setting. I never found a way to achieve 275 with that controller. I...

I'll have to second the Savannah Stoker controller. I have it in a Pit Boss 820D and it made my pit act like one of the big boys. Just half the cost.. lol
It is a great controller.
On my Pitboss I smoke my baby backs for 2 hours at 180 degrees. Then I bump it up to 225 until the ribs are done. This leaves a killer smoke ring and a great smoke taste.
I use B&B Oak pellets. These are 100% oak pellets.
When I had the original controller in my smoker I usually used the P0 or P1 setting. That would get me around 225 degrees without the major temp swings that the 225 setting would get.
My fan does not pulsate. It runs steady.
I usually use the cook program in the controller for briskets and pork butt.
I set the first stage at 180 degrees for 7 hours
Then the second stage I set the smoker for 225 degrees and cook until I hit 203 internal temp.

I did check my grate temp with the RTD and it was different. With the Savannah Stoker Controller you can calibrate your temp. So I matched my RTD with my grate temp and they now match.
No I do not have any burn back.
I have the PitBoss 820D.
I think you are getting the burn back...
