I thought I would make some bacon wrapped chicken stuffed with ham. I didn't have any cheese to put in them but they came out great. Smoked at 250 for about 1 hour and 20 minutes. Took them off and wrapped them in foil until everything else was done.
We enjoyed them for sure.
They had some nice pork butts on sale so I bought a couple one I made some good breakfast sausage and the other I decided to make some pulled pork to put up.
Here it is at 165. now I will wrap it and put it back in.

Well I did my first pork butt yesterday. It took me about 11 hours but boy was it worth it. It was done about 1;30 in the morning so I wrapped it and put it in the cooler for a couple hours. Was back up at 4:30 to take it out and pull it. I don't care what any one says this is some good stuff...
Well I had this nice turkey breast and decided it would be better smoked. Well I put it in a brine all night then Took it out and rinsed it real good. Went out and got the old smoker going then got my breast rubbed down in side and out. It was on for about 3 1/2 hours at 250%. Took it off and...
Well I figured I would make some jerky and ribs to day. Every thing is going fine.
As you can see the jerky is doing good and the ribs are rubbed down and in the smoker.
You got to love it.:)
All right every thing got done and of course every one enjoyed it.

Just setting around and decided why not make some jerky. So I made some out of a good piece london broil and some out of ground lean ground beef. The grand kids love the stuff. I just hope I have some left for tomorrows fishing trip.
A friend of mine gave me this metal box and I wondered what can I do with it? So I decided to make me a jerky maker out of it. Here are some pictures. It works good and holds the temp. right at 125. So next week you can bet what I'll be doing.

Okay.I have all the mods done on my ECB and I'm can't wait to try it. So yesterday I picked up some BBR. They were on sale buy one get 2 free. So I have the smoker ready and I removed the membrane and put on the rub. Here they are going on the smoker. I will let you all know how they come out
