    Yesterday's jalapeno/pepperjack for this Sat farmers mkt. Half boules getting wrapped and heading to freezer. I was told yesterday that the mkt might be cancelled due to weather.

    Time for the young chickens to meet the older gretzy hens. Better be ready to not have that light at night. First one in to see how it goes. We mowed today, they like the grass clippings. Ok in ya go. So far so good, only couple squabbles.

    Small Sourdough Jalapeno/Cheddar

    Friend of ours asked If I could make her a small SD/J/CH Sure not just one but how bouts 2. I found mild jalapeños in a jar Mt Olive brand. Diced kinda fine. Now need to bench knife this in half. Two smalls. Bench rest uncovered for 30 mins.

    Went few days longer. Very slight case hardening (but hey I aint selling it) When I checked this morning I had a few green mold spots on the casing. Ok time to take out, wipe down with vinegar and take a few slices. Wife said oh thats good...Pizza time.

    Few weeks ago I sent my nephew some sourdough, summer sausage to him. He lives in Idaho but is a firefighter in LA County. I got elk jerky and goodies today. His daughter shot a big elk last season and it took 2 days to haul it out. Yes he did use cure 1 in the jerky mix.
