    Stick burners - oak?

I've heard of people using oak as a general wood fuel, but what I haven't determined is whether they're using WHITE or RED oak.  Any thoughts?  I've got a new pit that'll handle a 15" split and would like the option of burning wood..., oak is the easiest to find but most of what I see is red...

    Which Oak to burn?

I'm doing ribs this weekend and want to burn wood instead of charcoal.  I'm thinking Oak as I hear of that used a lot.  Question I have is "Red" or "White?"  Does it matter?  (I know it matters with wine but not sure about wood!!!) I think I can get either and want to do this right.  Appreciate...

Cleaning the old smoker - yuk!

This morning I decided (perhaps not a great decision) to clean the grill.  I'm smoking a turkey breast tomorrow and this thing got pretty nasty over the last two years (as you can see).  After wire wheeling all the gunk off and out of it (included using a paint scraper and my fireplace poker to...

Smoke & Spice, anyone got it?

Got this  book for Christmas and man, it's over 500 pages of recipes for rubs, sauce and mops, plus lots of side dishes and deserts.  So far, I'm impressed with what I'm reading. Saturday's gonna be warm (after our winter blast here in the east) so I'm doing ribs...; baby back and country...

Need some help on fire-grate material

Putting a grate in my firebox to get it up a little higher off the floor.  Want to use a paint roller screen (for a 5 gal bucket) purchased at Home Depot.  Not sure what it's made of, but it's shiny steel and magnetic (so not aluminium).  Any recommendations (or cautions?).  I'm burning a stack...

Need a Rub recipe for Cornish Hens

I'm planning to do 4 of them this weekend; got the brine figured out but can't find anything on a rub suitable for chicken/hens.  Any thoughts? I have a store-bought rub seasoning but would rather mix something up (without 50% salt content), if possible. Appreciate any thoughts, Larry

    New from southeastern Virginia

Guess I should'a filled this out a week ago, but just came across it (been too busy reading all the other good stuff on this forum). New to smoking, but not grilling.  That said, all my BBQ up until now was done in a crock-pot (I know, that's probably sacrilegious   here!).  So While looking...

Medina River Patio Small Charcoal Smoker Grill

First time post, looks like a forum I'll spend hours in!!! I haven't bought a smoker yet, and really need a combo grill/smoker.  I looked at Brinkman's comparable model (to the subject item) and some of the reviews said the newer model (metal trays) had inferior steel/paint, and they had issues...
