Rotisserie Smoked Chuck Roast - French Dip

A friend and I modified a cutout of the drum to work with my 22" Weber kettle and now just doing some test runs. This is my first time doing beef, so I chose a...

Late Day Smoke of Beef Pepperoni Sticks

mballi.....they taste awesome and the texture is great but you're right, the color of the finished product was a little dark.  You can see in the pic of the sticks on the smoker, that they had a nice reddish color at about half way through the smoke.  I think I had the temp too high.  Next time...

Late Day Smoke of Beef Pepperoni Sticks

Hi guys New member here from PA

Hello Fellow Central PA, CBennett!  I've only been on here a few days and can tell you that everyone is totally cool if you develop a smoking "problem".  It's kinda like a support group full of enablers!  Tomorrow, I'm trying out Bearcarver's recipe for pepperoni sticks (no casings).  I've taken...

Thanks all for the warm smoky welcome.  I'm gonna test-run some ABTs (first timer here) this weekend in preparation for a big reunion of college pals on Nov. 6th.  I'll post some pics so I can get your critiques.  WooHoo!....this is like Toys 'R Us for smoke-heads!

Just signed up and looking forward to learning a lot from everyone.  I own a El Cheapo Brinkmann that I bought for $10 at a yard sale a few years ago.  So far, I have only used it to do beef and turkey jerky, but have had some amazing results.  I modified the ECB almost immediately to raise the...
