Stop using the bottom vents on my 22 inch weber kettle grill

I have owned this kettle 22" for nearly a decade. Fidgeting with the bottom vents, trying to control the temps, was an exercise in masochism for me. The "flower petal like covers" where encrusted with and mixture ash and grease from various smokes over the years. That gunk dries like poor man's...

Stop using the bottom vents on my 22 inch weber kettle grill

I use my weber 22" kettle grill as a smoker. The One-Touch Cleaning System A.K.A. bottom vents (https://www.weber.com/US/en/parts-finder/charcoal/open-ash-catcher/7444.html?cgid=42795#start=1)broke and I was sourcing replacement parts. However, I never use those bottom vents. They are kept...

Using fat trimmings as injection for brisket?

I was wondering if there is a school of thought of using the fat trimmings from a brisket as an injection? I am thinking you would use a double boiler to keep temps no higher than 100 degrees  F and render the fat from the trimmings. Next , mix in rub while the fat is still hot. Allow it to...

Would this weber kettle mod be possible?

Okay does brand of charcoal make a difference? I dont like using Royal Oak lump because the bits and pieces fall through the grate unless measures are taken to stop it. I normally use the Walmart brand briquettes because their cheaper than Kingsford.

Would this weber kettle mod be possible?

Ok based on the encouragement here I will try again this Monday. How often do you check the kettle to make sure the temps are around 225? Do you ever base your meat with a mop? I found that if the Weber kettles's lid is removed then temps spike up after the lid is placed back on the kettle.

Would this weber kettle mod be possible?

I did not include this in my original post. But the results, so far, have been hit or miss in the Weber 22.5" kettle. Mostly misses. The issue seems to be temperature control. According to, Food Network's Alton Brown's video, kettle grills are not well suited for smoking. Here is the video My...

Would this weber kettle mod be possible?

I own a Weber Kettle 22.5" grill that is used exclusively for smoking meats. I was wandering if the following mod has ever been attempted. Take a smaller grill, like the Weber Smokey Joe, and use it as a firebox for the 22.5" kettle. Use aluminum venting to carry the heat and smoke from the...

    Frying in an electric smoker?

Ok I changed my mind! Lowes has a sale on Turkey fryer kits at $30. It is a no brainer  to get the kit at that price.

    Frying in an electric smoker?

I see anything on the heating element that looks like a thermostat. I would rather avoid spending $100 on a turkey it I could use the electric smoker I already own. What about using a hot plate in the bottom of the smoker? Any ways I am going to try it on a 6lbs chicken tomorrow.

    Frying in an electric smoker?

I own a Brinkman electric smoker. It has a a large heating element that heats up to 350F. Normally, if you wanted to fry a turkey it seems you have buy a propane burner set up specifically for the purpose. I wanted to know if there was a reason why I could not repurpose my electric smoker and...

    Frying in an electric smoker?

It would not be possible to any thing in a electric smoker because the heating element would not get hot enough?

    Too much hickory smoke1

After years of viewing bbq pit masters on TV I decided to try my hand at smoking meats. I use a Brinkman Gourmet electric smoker and Cowboy brand hickory, mesquite wood chunks and  apple, hickory, and mesquite chips both purchased from Lowes. In opposition the the Brinkman's instruction manual...
