    Well, it did work out great, and that oil less fryer was great way to finish the skin. smoked it till it was 165 (a little late I know) and then did 20 min in the fryer. The meat texture was fantastic as was the flavor. smoked in half alder/cherry, little apple in the end. brined for 12 hours...

    I have it in my head that I am going to try to smoke the turkey heavy for 1 hour, then put it in The big easy infrared till its finished. The bird weighs 10.5 lbs. Does anyone have any advice? I haven't tried this before, and searches haven't pulled up much of anything from here, and I trust...
