new MES 30 poor combustion at lower temps

Yeah, it’s about an inch too wide to fit on the bottom beside the chip drawer. The 5x8 was originally designed to fit there perfectly in the older generations.

new MES 30 poor combustion at lower temps

My old pellet tray (5x8 I think) that fit perfectly in my old MES 30 does not fit in my new MES 30 unfortunately. Trying to decide if I should get a tube or do the mailbox mod.

If you want a smoke ring with your MES, try this.

I've used them in my AMPS in my 30" MES and they have never produced a smoke ring.  And I have tried the lump in the chip; tray and it did produce a smoke ring when used with chips but after I got my AMPS it seems like the charcoal sucks up all the oxygen and I could never keep the AMPS lit...

Weber Smokey Mountain Charcoal smokers for business?

I would think about building a small fleet of UDS.  They can be controlled with an electronic controller just as easily as a WSM, can hold just as much as a single 22.5" WSM and can be built for 1/4 the price in most cases.  Seen lots of them in competitions too.  Can put some high heat paint on...

Should I "season" my brand new Weber Smokey Mountain Cooker?

Wrap a couple bundles of chips in tin foil and poke a small hole in each pack to let the smoke out. Position them just as you would chunks with the hole up and they will last much longer and not flare up. Yeah, chunks can be kinda hard to come by in Canada where I am too.  I started making my...

    homemade lump charcoal

I've done it twice with maple wood.  Both times I used the same can packed very tightly. First time I waited until it stopped outgassing before taking it out and plugging the hole. Made very nice lump! Second time I didn't wait quite as long and pulled it off sooner. There was still some very...

    What do you drive?

; Ha ha ha! My first car was a 1974 Pinto wagon and my bumper sticker said "Caution-this car explodes on impact."  It was awesome, swapped in a 350 HP 351 Windsor / full manual C4 and it was fast! Left it parked at my brother in laws house for the weekend when I went fishing with some friends...

    Squirrel Dumplings

Did you actually boil them with the heads on them? I would have thought you should cut the heads off first?

    PRIME RIB (New Best Ever!!!)

The half roaster is actually an "umbrella" to keep the drippings from extinguishing the AMPS smoke generator.  I believe the foil covered piece on the right side is a heat baffle though.  I'm guessing a ceramic tile covered in foil.

Need advice on smoking a Prime Rib for Christmas

Is this done to get a bit of bark in the outside?

Boxelder maple and green ash trees

Yes they grow like weeds. It infested the whole yard where I got it from. Around here the biggest ones found are generally about 30'-40' tall and about 2' around. They mostly grow like large bushes with lots of small trunks under 1 foot in diameter. I did make a small batch of lump charcoal...

Can this Crab Apple wood really be drying this fast?

So I scored a pretty good amount of fresh, green Crab Apple wood last week.  I actually had to remove the little green apples off it so I know it was healthy.  I cut some up last week and finished tonight.  I was stacking it and splitting it to let it season when I noticed the chunks I cut last...

Boxelder maple and green ash trees

Just an update, I split up some of the boxelder maple into small pieces and let it dry for a couple weeks.  Threw a few chunks in my gas grill when the wife was doing some steaks and it produced some pretty sweet TBS! Smells just like the sugar maple chips do when smoking.  It will be great for...

Sad day my Lang came today...

From what I can see from the pictures, it really looks to me like the caster wasn't welded very well. I can't see any welds on the caster plate which says to me that there was no / poor penetration.  I would be concerned with the rest of the welds as well if it were me.  Maybe the welder had an...

Boxelder maple and green ash trees

Is all maple good for smoking? I just cut down a small Boxelder maple that the wind blew half over and I'm pretty sure it is good for smoking but just making sure. I also will be felling a large "green ash" in the next month or so and am debating keeping it as well for smoking. Any opinions...

    A-Maze-N Pellet Smoker Review

Thanks Dave, I really appreciate the test!  I can't wait for the smoker to arrive!  Was shipped today.  I was searching on youtube today and seen a video from smokingpit.com where he smoked a piece of chocolate cake with an original AMNS and he used pellets.  He had 2 rows side by side going and...

    A-Maze-N Pellet Smoker Review

I Thought i read earlier that Traeger pellets don't work good in this?  If they do, that's great as I have lots of apple on hand.  Any info on "Louisiana Grills" brand pellets?  I have a few bags of apple and hickory of those as well. Just wish I could find pecan pellets locally. My local...

    CENTRO(MASTERBUILT) 30" SMOKER

You're gonna love it, especially come winter! These are very well insulated and make cold weather smoking a breeze!  I've used mine at -30c and the only bad part is running out to check on it / add chips but that is not going to be a problem this winter as I now have an AMNS and just ordered an...
