    spare rib question

Follow up - i smoked my first rack of ribs on Sunday. It turned out great. I appreciate the help understanding the trimming of the brisket piece. They turned out great and i cannot wait to do them again. As a matter of fact a couple of us are taking out buses out camping tomorrow and i am...

New user, new Smoker-- think i've narrowed it to two smokers

I voted for the MES 30", but i just bought the MES 40" 1200w with window unit, and i love it! It is the most recent model and has the little access door to get to the wiring. Gander Mtn had the exact same smoker for 449.00. At Sam's Club it was 269.00.

How important is it to soak wood prior to smoking? and why?

I am yet new to this. When i bought my MES 40"er i first tried soaking the chips. It just seemed to me that i had better smoke when later on i added dry chips to the smoker. So thats how i do it now - for the time being. I agree that you would need to soak wood for an awful long time in order...

    How to seasoning cast iron

That is the only time i would ever use soap to clean any of my cast iron. Just the initial time, after that just wipe it out with a damp rag - no soap. I use bacon fat to season all of mine. I mess around with antiques, so i have a collection of old Griswold pans. They are the greatest, its all...

    Mountain Man Breakfast

Yep, those things are great cookers. When it is late or we dont have much time, we throw spuds, carrots, onions, and a small roast in ours and just set it in the fire towards the edge. If you can find a DO with the inside trivet, or the trivet is available as an option, go for it! It prevents...

The Ron Man has left us

I have only been around the forum a couple months. It was Ron's posts that helped me decide to buy the 40" window MES. He also provided a lot of other good info to me when i was on shaky legs as far as getting started. RIP Ron, and thank you very much!

What to Do In The Fridge Over Night?

Yep, wrap it. I don't want everything in the fridge picking up the smell/taste of the rub. Save that for the meat.

    Water Pan questions

I thought it was also a way to add some subtle flavor by putting juice etc into the pan along with the water. I am still new at this, but i have not tried my MES without having liquid in the pan. Guess i should try it dry just to see what happens.

    best beer for BBQ

I thought all tequilas were made from the blue agave. If made from the other agave plants it has to be labeled mescal. As for beer for smokin', pretty much anything that is ice cold, but i sure do prefer the real beers made from malts, not the american excuse for beer. All time fav for drinking...
