    Horizonal Offset Smoker Mods

    My first smoke I didn't have any modifications, and although it turned out a bit dry, it was still good :) The only thing I have done so far is add the thermometers at each end. I don't understand how they expect a person to do any smoking using a thermometer without degree markings on it...
