Almost ready for a test run

Finally got it done.  Cooked to 140 internal in about 2.5 hours with the smoker between 160 and 180.  It could've definitely gone another 5 degrees to firm up the inside, but still delicious.  The outer layer was a bit salty, so maybe a little longer rinse next time.  The sweetness was perfect...

Almost ready for a test run

The salmon cured overnight and the pictures below are right after I washed it clean.  It's sitting in the fridge uncovered drying now.  I'm hoping to start around 1 this afternoon after these storms move through.  4 hours should be enough time for a decent pellicle to form, right? I didn't...

Almost ready for a test run

It's been a busy summer, so work on my custom build has been a bit slower than I would've liked.  To add on top of that, my computer recently crashed, so the pictures below are only the ones from my phone and not the best.  I hope to do a full writeup once things are more complete, but I just...

    Source for element, thermostat, etc?

Does anyone know what the diameter of that Brinkmann electric element is?  I'm hoping I can use it in my uds but can't find any specifications on this site or the greater internet. Also, a pizza place closed by me recently, and I salvaged a long straight heating element from the garbage.  What...

    New drums are here

Yeah, from what people say around here, it sounds like that food grade plastic liner can be a real pain to remove.  It's 10 bucks cheaper without it anyways. I know a lot of folks get used drums locally wherever they are, but is there some preferred online vendor to order from?  For that...

    New drums are here

I got them over at www.newpig.com . I had to get new ones because my girlfriend was scared of even the smallest chance of contamination from a recycled drum.  Instead of fighting it, I just bent over and shelled out the money for these.  Sometimes it's easier that way... But at least I could...

    New drums are here

My steel drums just arrived today!  Unfortunately, I'm going to be out of town until next week, so don't expect much progress.  My plan is to put a hot plate or heating element in the larger 30 gallon one with the meat, and connect that with a dryer hose (like I've said before, I'm not a welder)...

    Texan in Chicago

Thanks for all the welcome wishes.  I was busy all weekend moving, but I'll keep everyone updated on the build once it gets started.
