    Advise: sawdust vs pellets

    I have been using the original sawdust from AMazeN for a number of years (back when it was the only thing available).  I had a lot of sawdust of various kinds, but am close to running out.   Hence I am now considering options that were not available to me back when. A. continue with my 6x8 tray...

    MES 30" Tips?

    Some people use the AMNS for all of their smoking.  It is essential for doing cold smoking, such as cheese.  We love smoked cheese and could not do it without the AMNS.  For things like pork butts, ribs, turkey -- I still have a lot of chips and will continue using them until they are gone. ...

    Whats on the Bottom??

    I don't think so -- the wiring goes down the back side.  There is probably some insulation sandwiched between two pieces of metal, but that should be it. Curious as to why you want a hole in the bottom.

    Check out these ribs!

    I wish that our store had beef ribs with that much meat on them.  All they have is frozen ribs that look like they have been through a meat scrapper.  You see bare bones, with only a very little amount of meat in between the bones.  NONE on top.  Needless to say, I have never bought them!

    Tabasco Barrel Wood

    I did a google search and found some other forum that discussed it.   The majority of the folks said that the tabasco flavor was gone from the smoke within a few minutes, then it was just like oak. JD used to be my favored wiskey -- then I discovered Maker's Mark.  Still like JD, but MM is a...

    !st attempt at cheese

    How large a block?  I cut the 2-3 pound blocks that I buy in two pieces so that there is more area for the smoke to cling.

    Tabasco Barrel Wood

    Has anyone here tried these wood chips? http://countrystore.tabasco.com/prodinfo.asp?number=09227 I was just on a trip in Louisiana, and we saw them in several places.  According to Avery, they buy used Jack Daniels oak barrels and use them to ferment / age the tabasco peppers for three...

    corned beef -> pastrami

    Well, we bought some point cuts on sale at $1.49 per pound.   One of them was cooked immediately for an early corned beef and cabbage.  The others went into the freezer to turn into pastrami later on this month. The point that we cooked was VERY disappointing.  I've had point cut corned beef...

    Chuckie Vs Eye of Round Question

    My main use for eye of round is to turn them into corned beef.  We prefer the very lean corned beef.  OTOH, we buy ready corned beef flats or points from brisket to turn into pastrami.

    corned beef -> pastrami

    Just a reminder -- this is the time of year when corned beed tends to go on sale.  Remember to pick up some extras so that you can turn them into pastrami. One of our local stores advertised points at $1.49 instead of the usual $3 plus.  Next week might even bring better sales as St. Patrick's...

    Mike from Lakeland, FL

    Welcome.  I graduated from Lakeland High School more than half a century ago.  I remember Miss Haley, our senior English teacher who finally retired after teaching there for 69 years.  I also remember the Smokehouse BBQ place a bit to the west of town center.  The sauce there got so popular that...

    Another FL boy

    Welcome.  I was married in St. Pete (decades ago).  My son is in the army -- probably with the same MOS as you started out with.  He did a tour in Iraq, then Ft. Bliss, and is now back in the Mid-East.

    Help with AMNS for use in a MES30

    Also, it often helps to put a tent over the AMNS if there is anything that might drip on it -- like oil from the cheese.

    MAVERICK ET-732's - Now In Stock!!

    Nope -- I'm sure you've got all you might need.     You can have the suggestion for free.  I was happy with how well it worked.  Hardly spilled any of the dust.  Before when using a paper funnel, there was a lot more spillage. I have two pork butts and two racks of baby back ribs in the freezer...

    MAVERICK ET-732's - Now In Stock!!

    Thought that you might be interested in an idea I had for how to store that five pounds of dust. Some time ago, I saw a post suggesting plastic juice jars.  I have been saving my Ocean Spray jars.  Previously, when I filled them, I made a funnel out of a rolled up tube of paper.  Worked ok, but...
