    Way to go!! Now you should buy an 18" terra cotta saucer (like goes under a flower pot, wrap it in aluminim foil and put it in the fôil wrapped water pan. NO WATER! Makes cleanup so much easier. Enjoy:grilling_smilie:

    Resting a pork loin?

    I don't sear - I just take it to 145F, rest for 10 -15 tented in foil. Haven't been any tricanosis(sp) in the states in the last decade or so

    Folks I know who live in Carolinas like PP with vinegar sauce BUT for KCBS they claim that they score better if they moisten their PP with a KC style (sweet, tomato, spicy) sauce. YMMV
