I am lucky enough to have a father-in-law who has lots of fruit trees on his property and lives in the central valley of California where there are lots of orchards. He supplies all of my wood for smoking just based on what trees are being replaced.
I'm sure you could, but I like having the drippings all mixed in with the meat as is. They are pretty flavorful from the rub spices. But if you do try something with the juices, post it up and let us know how it goes!
Thanks for the great feedback.
papagreer, I've been wanting to make my own 5 Spice, but I didn't have a spice/coffee grinder to spare. Now I do. Thanks for the recipe!
I forgot to mention that my buddy at whose house we had the New Years Eve party came up with a great serving idea. In...
Sorry it has taken me a while to post the Qview. I actually added some brown sugar to the meat after I pulled it because it didn't have the right sweetness. Not sure what I did differently. but it came out fine in the end. Here are pics in chronological order:
Rubbed Down and ready to smoke...
To celebrate the arrival of the new year, I am making a few pulled picnic butts. Tomorrow's festivities kick off around 2 pm, so I have decided to smoke these today and overnight so as to make sure everything is delicious by the the everyone gathers. I thought I would share my recipe with...
Cheers to experimentation, even when the results are horrendous. After all, someone had to be the first to say, "you know, I bet this meat would taste good if I cooked it for a long time over this wood fire..."
I think the cold smoked mango salsa is a great idea. Smoked tomatoes make great salsa and pasta sauce, why not smoke the mangoes. But yeah...another thread. ;)
So I smoked some coffee this weekend. It was Trader Joe's Smooth and Mellow blend (which we drink everyday) smoked for 1 hour over nectarine wood with heat provided by mesquite lump charcoal.
Conclusion: Gross. I will never do it again. I would not recommend it.
Damn, now you made me want to make prime rib. We are planning on smoked salmon and tri tip, but if I find a nice prime rib today, that may replace the tri tip.
Enjoy.
Ok, I will give this a shot this weekend. I am thinking an hour over nectarine wood should be a good starting point. I'll document it just in case it turns out good and is worth sharing. I wouldn't bet on it being good but I am going to try anyway.
Just curious, has anyone tried making smoked coffee? If so, how did it go? Any tips?
I am thinking of taking some house blend whole coffee beans and smoking it for an hour or so just to see what it all ends up tasting like. I love coffee and I love smoked foods, so it just makes sense to try...
Wow. I had been debating with myself about buying the recipes because I thought, "how good could they really be?" I figure it this way, I could waste money, time, and meat trying to develop my own great rub and sauce recipes...or I could buy Jeff's and tweak if I want.
Thanks for the great...
Nice find Wingman.
I have another question as I prepare to make jerky this weekend. Does this jerky need to be refrigerated to be stored? I realize that kind of defeats the purpose of jerky, but since we are not adding nitrates, nitrites or other preservatives like commercial jerky, I want to...
For those of us too cheap to buy the smoke rack listed above, consider a stackable cooling rack. My wife has a set for the kitchen that I may steal for the smoker...
