After a 12 hour plus smoke and pulled when the brisket hit 205. Put it in a cooler for another hour. Unwrapped and sliced. It was delicious; however it was late, still have a good plate with some 'tater salad, and a couple of deviled eggs. Cold beer to wash them down. What to change for...

I know I am late to this post... Thank you foamheart! That is one amazing looking bird, can only imagine the taste. I haven't smoked any poultry, yet. My son and I are going to give it a shot tomorrow. This post has so much information that we hope it goes well!
Glad it worked out. Keep practicing and before you know it you'll keep practicing some more. But darn if allthe practice won't pay off. They'll come back for more and more. Happy you didn't give up!! Happy smoking!! Pictures next go round!
Great job. We thought we were buying spare rib and then the wife noticed that they were pork spare rib brisket. But for 92 cents/pound we figured we couldn't go wrong. Thanks for writing this up. We'll have to see how ours turn out and will post up the results.
Around here it's hard to find lump made in the good ol' USA. No telling what if any controls are in Argentina, Mexico, Brazil... etc.... I saw this one at Wal-Mart and will be trying it out in the near future.
