The Secret To Good Sliced Brisket Defies Conventional Wisdom

Great thread, making me hungry for brisket! Gonna have to try the no trim method since mine tend to dry out. I can't fit a full packer on 1 rack in my vertical smoker, it'll need to be cut down to fit. Is there anything wrong with leaving the point & flat attached and simply cutting the entire...

want to try a standing rib roast

I've been asked to consider smoking a standing rib roast for my family for the upcoming Thanksgiving holiday. I have very little experience smoking beef so I'm here looking for some guidance. I'd like it to have a very mild smoke flavor with a rub that appeals to everyone, not looking to take...

Newbie With A Master Forge Propane Smoker

My neighbor has that smoker and had problems with high temps. His solution (same one I use with my Brinkmann gasser) is to control the gas in the range between the off position & the ignite position on the dial. Neither smoker show this range as low, high, or anything between but give it a shot...

forgot about this thread. I owe coco a big thanks! His little trick saved the day and solved my high heat issue. I've done a couple great smokes since this thread and will be doing another this weekend. Thanks again everyone, especially coco, for your help!

    doing a small butt tomorrow

Time for an update. Its been in for 11.5 hours and is up to 190 degrees. Does this seem a little strange for a 3.5 lb butt? I wrapped it at 180 and it has picked up 10 degrees in about an hour, gaining temp much faster now. It seemed to stall out for a loooong time in the 155 - 159 range. Never...

New guy from central IL checking in

Stopping in to introduce myself and compliment all on a great resource. I'm Aaron, 33 years old and I have a lot to learn about smoking. I had a brinkman vertical electric for a few years and never was impressed. My wife got me a Brinkman vertical gasser for christmas last year. I understand its...

    doing a small butt tomorrow

Picked up a 6.25lb butt today and I'm considering smoking only half of it tomorrow (along with a slab of baby backs). Aside from cooking times, is there any difference in smoking a 3 pounder vs. a 6 pounder?

    chips too small?

Took some shagbark hickory and introduced it to a jointer to make some small chips. I'm wondering if there is a general preference to chip size, mine are similar to those made with a chainsaw. I could easily use a chopsaw to cut some "cookies" and split them down but I'm not sure on which is...

Brinkman from HD running too hot

Ran a search for Brinkman and found very little info on this unit, mostly suggestions to steer clear and pay a little more for a gosm. Well, it was given to me as a gift and I'd really like to make it more functional. This unit runs 275-300 on low, too hot for my liking. I don't know what to...
