Too much air flow in my ECB charcoal pan???

HAHAHAH!   You sound just like my dad, telling me I'm over-thinking it.  I guess he is right when he says I have a tendancy to do that.  I really appreciate the opinion and I'm just gonna leave everything as-is, and see where it goes.  My buddy told me the same thing about it being tough to mess...

Too much air flow in my ECB charcoal pan???

I'm looking to do my first boston butt this weekend and wanted to seek some advice.  I feel I have all the bases covered, except this will be the longest smoke I have done so far. My ECB charcoal pan is literally splattered with 3/8'' holes for ventilation.  This worked great when I did my...

Pork Tenderloin and my 1st qview!

This past Saturday I was a little bit bored and wanted to smoke something for dinner.  Making this decision at about 3pm didn't leave a whole lot of time to do much, but further inspection of my meat selections gave me an idea...PORK TENDERLOIN! Now I only have to feed me and my girlfriend, so...

    Smoking with Maple

A guy at work is selling truck loads of maple and cherry for $50!  I don't have a truck, or live close to my office, so he's gonna bring me about 30-40lbs of each to throw in the trunk of my car all for $5! Looking forward to using each since I've only smoked with hickory so far!

All the pieces are falling into place...

I only write this post to get on my soapbox for a minute to preach to a community of many who share common interests (and the fact that my girlfriend is soooo sick of hearing about my ECB transformations and how great I am for doing it) Ladies, Gentlemen...as of last night, I have officially...

Do I have a safety issue here????

Hey everybody, I just completed a bunch of mods for my Brinkmann ECB and one of them was to drill holes in the rim of the charcoal pan and use 1ft. threaded rods with washers and nuts to be legs for the charcoal pan. After doing some more research, the website that suggested this technique...
