Good morning folks just figured I would see what was going on while I'm waiting on my Brisket to finish. Chucked it in the WSM last night about 21:00 and now I'm playing the waiting game been up for the last couple hours and we have stalled sitting at 157 no worries tho been down this road...
Sounds like it just stalled. The last brisket I did it was in the teen's and it finished in 12 hours. I have never had one not stall 163 for 7.5 hours turns dinner into midnight snack/breakfast and I must say Brisket and Egg's works out well.
Like others I would pick up a good thermometer...
You will love your WSM is it a 18 or 22.5? I have had a few different smokers and Just love my WSM 22.5 I just load with fuel and walk away many times not even looking back for a few hours, Holds temp great!!!
