Butts and Ribs for Offroading Weekend

Every year, I host an Xterra Offroading weekend at my house.  This will be the 7th annual Back to School Run.  If you have an offroad vehicle and are near Central, NY, please stop by.  Even if you're not close, we've had people from as far away as California.  You don't have to own and Xterra...

    ATB's, It's What's for Supper!

After dropping my son off at college, I needed some comfort food.  Not the 30 plus ATB's many of you do...it's just the two of us, but ATB's, NY strip steak and corn on the cob makes me happy. Using two of my three smoking devises is always fun!  One of these days, I'll have them all going at...

    Score!

I gave a coworker of mine some bacon I had made.  Two days later, he comes to work with a truck load of split apple wood and loaded it into my truck for free.  About half is seasoned and the other half is freshly split...perfect! I already unloaded most of it before I thought of showing it off...

With the new cold smokehouse complete, I needed something to put in it to try it out. I picked up two pork bellies this afternoon. This is only my third time making bacon.  Here's my process...please let me know if I am doing it right.   I measure out cure #1 for each piece of whole belly...

I wanted a better place to do cold smoking other than my Brinkmann Offset, so after reading several threads and getting ideas from other people, I came up my own.  The interior dimensions are 2' x 4' to mach the aluminum sheet I had. It's 3/4 plywood lined with aluminum sheet.  While it will be...

    Cheese with Amaze-N-Pellet-Smoker

I've been making cheese right along and just got the Amaze-N-Pellet-Smoker the other day and thought this would be a good first try. Four hours in the smoker and it is now waiting in the fridge.

    First Bacon

After reading all the posts on here on homemade bacon, I had to try it. I found a great source for pork bellies in Albany, NY, and just about anything else you may want to find regarding meat.  Tons of hand made sausages and custom-cut meats.  It's a great place. http://www.rolfsporkstore.com/...

    Landjäger Dry Sausage

I had this sausage over 15 years ago when a butcher near here used to sell it.  He went out of business  about ten years ago and I was not able to find it before, so I started to make it myself.  I have made it several times with varying success.  My biggest problem has been cold smoking the...

    Hello From Upstate, NY

I have been reading your forum for the past couple of days and I have learned a lot of good information. Yeah, I know I'm not from BBQ country. I'm the only one I know around here that uses a smoker, but I'm looking forward to learning more. I have been smoking for about 10 years on a...
