    Have you ever?

Have you ever gotten out some nice elk roasts, brined them over night, slathered them with brown mustard and a rub made from salt, pepper, garlic powder, onion powder, paprika, and cumen, smoked them at a nice 225 - 250 until they reached an internal temp of 150, let them rest and sliced them...

    Overnight Pork Shoulder

I haven't been on here for a while, partially because my smoker needed some maintenance and I hadn't gotten to it. Well, I committed to making lunch for a work meeting today and that forces me to get things back in working order. Put two shoulders on last night at 10:30 pm that were coated...

    Success!

Well, after all the goofy questions and hard work my UDS is currently on its seasoning run.  I am amazed at how fast it got to temp and locked in on the desired temp.  We'll see if that was just luck or if it hold true for the whole run.  I scored 2 12" thermometers at Walmart today for $5...

I feel pretty dumb asking - How do you light your charcoal for the UDS

Title says it all.  I built my UDS and have my charcoal basket done but don't know the best way to get it started.  Read about the minion method but don't know if that is the best way.  Thanks a lot.

To Burn or Not to Burn

I put this question in another thread but it was at the very end and not really clear, so I figured I'd ask again.  I got a drum that held corn oil (the kind used in salad dressings, frying, etc.).  It is unlined.  Do you think I need to burn it out or can I just go ahead and make my UDS after...

Unlined Food-grade Drums in St. Louis area and a question

Hey everyone, I recently moved back home for a bit and decided I should try and find a food-grade drum while I have the opportunity.  I ended up finding an awesome deal.  I got an unlined, closed-top drum that was used for corn oil for $8 (offered me 2 for $15).  The guy I bought it from...

    Really small UDS?

I was thinking about trying to get a drum that used to hold 50 lbs of popping oil to use as a mini-UDS.  I can't seem to find the size of these things in gallons but I'd guess they are closer to 10.  Is this too small to make a usable UDS?  Let me know your opinions or experiences.

    Cleaning the lid

For those that have used the flat lid from the 55 gallon drum for their UDS, what did you do to clean it? I have a drum that held one part of a foam compound that I will burn out. I saw someone mention sticking the lid on while doing the burnout may warp it. Is there a better way to clean the...

    Firing the Char-Broil up!

I'm pretty new here and joined to see about smokehouse and UDS builds. I have a Char-Broil electric that I have used and been happy with the results but I want to improve the quality I'm producing. After reading through some threads, I found some good tips for using my cheapo electric that I'm...

    Hello from MT

My name is Jeff and I currently live in north central MT about 50 miles south of the Canadian border. I have a cheapo electric smoker right now but am thinking about building a wood smokehouse or an UDS.
