    I know most bbq sauces get simmered for a bit.  How long does this need to be.  I just did my first ever batch of sauce and used Jeff's recipe.  I did simmer it for a little while even though the directions didn't say to.  Was I supposed to?  If I was, how long should it simmer?

    What defines a UDS??

    I am curious on what defines a UDS.  Is it your typical drum standing there as a smoker, or is it any smoker built from a drum or drums.  I see some drum smokers with another drum as a firebox and just wonder if those are actually SFB smokers or are they still UDS. Curious!
