Butts and loins today in the Humphrey's [Que-view]

My mom and a friend showed up unexpectedly today with 5 huge (7 to 8 pound) loins and two 9 pound butts wanting me to smoke it all for them, and keep whatever I want for myself. So I loaded up the fire box with competition briquettes and nice baseball size chunks of hickory.

Pecan smoked chipotle rubbed chicken wings. With Q-View of course!

I bought a couple of stainless baskets and thought some smoked wings would be the perfect test run for them. Two hours at 250 with pecan wood smoking the entire time.  They they had a great smoky flavor behind the chipotle rub, but no smoke ring in the meat with such a short time in the smoker.

First ribs in my converted refrigerator

I had some family visiting so I decided to fire up the old Frigidaire.  I made two racks of spare ribs and two racks of baby backs.  Smoked for 3 hours at 210 with pecan wood basting with apple juice, then rapped in foil and held at 170 for two more hours.  Everyone loved them and not a single...

My compostable Sun Chips bag experiment.

If you haven't heard about it yet, Sun Chips is promoting their new chip bag packaging as 100% compostable. Some people are claiming that the bags take too long for regular large scale composting, such as those which are found in some cities and universities. I am curious about how the bags...

Just the beginning of my fridge smoker project

I've seen a few builds around here using very similar old refrigerators, so I have a pretty good plan (I think) already laid out. It will be set up for either cold or hot smoking, with a smoke daddy smoke generator as well as a 1900W finned strip heater inside and an Auber instruments PID...

Hello; new guy from Indiana here

Hello everyone. I'm a long time charcoal griller and have dabbled in smoking with indirect heat and soaked wood chips in a old pan on the coals. The results have actually been pretty good, but it is tedious and I want to do it better. I also make my own sausages, and I want the ability to...
