    Need help getting temp down

    Get a good pit thermometer and practice your pit temps with it. Cook to when the meat is done not to time. Use time as a reference. I cook hot and fast which works good for me but I watch my for when it is ready to pull. There is a lot of good information on this site look around . Also welcome...

    I love rib roasts on the smoker.. I inject with Butcher BBQ let sit overnite and cook to 140. Good for a meal and sammies the next day Mike

    Well insulated smokers

    What meatmopper said. I have a stumps it is very well insulated and uses very little fuel. It works great on colorado on cold weekend days. Stumps is pricey and has a long lead time after you order,each one is built to order. Mike moving to warmer weather is an option I like too

    Don't use match lite or kingford,except in the weber, use lump in the smoker. Kingsford produces to much ash for the smoker due to the Digiq fan. No lighter fluid in the smoker. Mike
