Thanksgiving smoke for a guest with gout

So a good friend of mine and his family are coming up for the holiday.  Found out that his gout is acting up, and sounds like turkey - for him at least - is out. I'm thinking a cornish game hen or chicken of some kind is a decent replacement, but open to ideas.  Even non foul.  If you do...

    MES 30... $149 at amazon......

Hi Dave, thank you for the reply (even though I hijacked the thread :) ) I drilled out the rivets and took the back panel off, and no burned wires or anything, so your theory sounds correct.  I'll do a search here on that issue. Thank you again, James

    MES 30... $149 at amazon......

Funny that it's on sale today.  Mine seems to have just died.  It will smoke for about 30-45 minutes, but then the reading says it is 300 degrees and shuts the element off. I'm off to search about the issue and see if there's anything on it here.

Finished the turkey smoke (w/ q-view), but a quick question. Do I carve it now or wait until Thursd

We're traveling about 7 hours to see some friends.  Should I just take this bad boy as is and warm / carve it Thursday, or go ahead and carve it now? I used my jalapeno / cajun / butter mix and injected as well as rubbed the bird yesterday afternoon and threw it on the smoker when I got home...

Cooking for Friday lunch, have a butt and rib question

I've done a few butts and they turn out great, but I've always foiled. I want to spritz with a apple juice / orange flavored rum mix. So, if I foil, the spritz isn't going to help with the bark, right. So do I a)not foil and spray every 45 minutes to an hour b)foil and spray before I foil...

First smoke in MES, Pork Butt w/ tons of qview!

Fergus Falls, lol. Man, I've got to say, it just seems to taste better every day that it sits in the fridge. It's amazingly good, I have to think a lot of that has to do with Jeff's rub. We've shared with friends and neighbors and it's getting rave reviews. I just went to the store to...

First smoke in MES, Pork Butt w/ tons of qview!

As stated, first smoke ever. Got my MES Thursday, prepped the Butt Friday night and smoked all day Saturday. I used Jeff's rub - excellent! I also made Jeff's bbq sauce recipe which turned out great. I cut the brown sugar about 1/8 cup, doubled the tabasco and added about a teaspoon of...

Noob MES question about adding chips

Thanks everyone, I got my nap in. She's reached 140, so that's good. Smoke is just right, thin and blue! I'm gonna go read about smoking some onions and potatoes and make a meal out of this tonight.

Noob MES question about adding chips

How often do you usually have to add chips? I've got a ton of chips, I may try chunks when they run out since I've read the chunks last longer. I've used Jeff's rub and left a butt in the fridge overnight, just threw it in the smoker (first smoke!). I'm getting qview for later, too. I'm...

    Another Minnesotan here!

Thanks for the welcome wishes. I also ordered a digital thermo and bought Jeff's rub and sauce recipes. We're accustomed to "show me" bbq sauce, which I can find in Missouri (God's country) and I also like vinegar and mustard based sauces, not much into sweet sauces, but we'll see! Any...

    Another Minnesotan here!

Howdy all, James here. I just ordered my MES yesterday and I'm excited to get it in, seasoned and smoking! I've never done smoking of any kind, just regular ol' bbq on the grill (both charcoal and gas) I'll just spend the next few days drooling over the recipes and qview that I've seen around...
