    Northern Michigan Red Oak

No kidding! I have lots of family in Cheboygan. Some used to live near Black Lake.

    Northern Michigan Red Oak

I'm no tree expert but I'd say from region to region all trees have change with different characteristics. If you able to get your hands on it, go for it. In my area red oak is the best and easiest wood to get my hands on. While I have other species I can get here also, the amounts that I can...

    Northern Michigan Red Oak

I’d definintly burned but wanted to make a lot of white smoke and sizzled for awhile. So I figured it wouldnt hurt to dry it out more and with smaller splits it will happen faster.

    Northern Michigan Red Oak

I’m not sure! Lol. I know Bois Blanc is French and I know it stands for something like White pine or white wood.

    Northern Michigan Red Oak

Well I used this new wood I split one time and could tell it wasn’t as dry as I tested. So I split a few pieces and tested in the core. 24-25%. So I resplit a lot of the pieces that were a little big, stacked some under the smoker and filled 2 mills crates of them and placed them behind my wood...

    Smoked eggs

Did you ever do more comparisons with the different cook temps? Very interested to see what you found out. I have chickens and would love to smoke some eggs.

Horizon 16" classic vs Yoder Cheyenne

Congrats on getting a Horizon! Preheating the wood helps getting some more moisture out and does help it to catch fire quick and producing TBS”thin blue smoke” which you want. Not the thick, billowy, white smoke that will leave a bitter taste on the meat.

    Northern Michigan Red Oak

Great! Thank you. I filled a large tub of it also and place it in my basement. I beat with wood and the humidity in the house is ultra low through the heating season. Figured it couldn’t hurt to get all the moisture I could out of it.

    Northern Michigan Red Oak

So in my area I have access to as much red oak as I can get my hands on. Well just about 2 weeks ago I found, cut down and split a dead standing red oak tree. Didn’t hardly have any bark on it. Well today for Christmas I got a wood moisture meter. Right away I couldn’t help myself and tested...

Horizon 16" classic vs Yoder Cheyenne

Thank everyone! If I would have ordered this unit personally I would have gotten the pot warmer, mostly to set wood splits on it to preheat them. Since it doesn’t have a flat spot on the firebox any tips tricks or ingenuity anyone would be willing to share so I can set the splits on it?

Horizon 16" classic vs Yoder Cheyenne

Probably a pork butt. They are pretty forgiving in my experience. The snow only came down hard for about an hour, 1/2” I’d say. But blowing like hell out or I would be out there lighting a fire in the box.

Horizon 16" classic vs Yoder Cheyenne

Well guys, no reason to answer my questions. My wife surprised me this Christmas morning! I got a Yoder!

Horizon 16" classic vs Yoder Cheyenne

After reading a very lengthy thread of the Yoder Wichita and Cheyenne drafting issues it made me a bit nervous to go with the small Yoder offset. I know it seems many people have had success with it, but also many have had problems. Since researching I've come across the Horizon 16" classic...

    Water pan/therm probe

Yeah I know lots of people do and don’t use water pans. I just always have cause that’s how I started out. I’ve got enough probes so it would be in addition to the grate and IT temps. I agree that the probe shouldnt touch metal that’s why at first thought I could hold the probe just off the...

    Water pan/therm probe

Hey guys this may be a really dumb question but here goes. Depending on the amount of room I have in the cook chamber I sometimes run a bigger or small water pan. I also try not to open the cook chamber up if I don’t have to and sometimes I haven’t noticed my water pan had gone empty. So I’m...

    Offset outside care

Well I’m hoping the outside storage of the cooker will be temporary as I want to get a garage built next year. If I were to coat the outside of it with oil how hot would I need to get it and it’s there a particular oil I should use?

    Offset outside care

Thanks for the tips so far guys. I was thinking while during a cook would there be an issues if I coated the exterior with cooking oil? Kinda like Al said, season it like a cast iron pan. I’m hoping to get a Yoder Cheyenne soon.

How to store and seaon wood?

I plan on filling a milk crate with some red oak, it's currently dead and still standing with no bark, and placing the crate behind the wood stove I have in my house. Should be pretty darn dry even before I cut the tree down.

    Offset outside care

For those of you that can't store your offset inside and have to cover it do you ever coat the exterior of the unit in oil?
