is a lot of grease smoke bad?

Well I finally got my electric smoker built. The camera isn't behaving so pics can wait. My smoker uses a 2100 watt stovetop element, and I use a regular oven thermostat with it.  Question is: The smoker is doing a lot of sizzling, and it looks like all the grease hitting the bottom of the...

    Chip tray or smoke generator

Hi folks. I'm thinking about doing a build very similar to a fridge build. Four racks, vertical, smoking at 225 deg. F. For the heat, I'm going to buy a 220V 2100 watt element from Allied Kenco. And I'll also buy their prewired thermostat. My question is... with the heating element turning on...

    Sausage Starter Kit?

I'm still a real noob to hot smoking, but damn if I don't want to start smoking some sausage too. (insert joke here ) I'm planning on buying the 5 lb LEM sausage stuffer. Mid week chicken with Jeff's rub 'n Silverwolf's sauce

Got about 5 pounds of chicken quarters, some legs and breasts. Also home butchered country style ribs. Brined and ready for the rub. I just bought Jeff's rub, and made a double batch. Happily all the ingredients were available here in Thailand. Not too hard to make, and it tastes good dry.

Big weekend cook and my first Qview

Mornin! We had a house warming over the weekend and I was put in charge of the Q. Here was the scene at 0800 the morning of the party. 20 fat chickens + 2 yardbirds, 2 racks of ribs, 10 pounds of wings and 4 old school fatties (out of frame). It's only my fifth smoke, but what I've had...

    Source for element, thermostat, etc?

Doing some serious thinking about my next build. I want to build a stainless steel cabinet smoker, for either hot or cold smoke. Build the cab myself, but I need a good source for an electric element and thermostat, etc. So maybe a sales place on the internet or mail order place?

    Howdy!

Just a friendly hello and introduction. My name's Mike and I'm a 30something merchant marine who works in the USA and lives in Thailand. About a year ago I got real interested in barbequing so I started my research online, just checking around. I built a little 10 gallon homebuilt smoker but...
