    Freeze before or after smoking?

One more question. If I smoke it this weekend do I freeze it whole or freeze it with the pork pulled and brisket sliced?

    Freeze before or after smoking?

The other night I was talking to a friend and making plans for the 4th of July. Today here he comes on his own with; 3) 8 lb Boston Butts 2) 11 lb Beef Briskets It would be better for my schedule to smoke them on the 3rd into the 4th. As a last resort  I could do them this weekend but time...

    Grilled Corn

I love to BBQ and cook outside and I am told I'm pretty good at it. If I have an Achilles heel or something that gets the best of me its grilling corn. I don't know what it is. I follow recipes word for word. Maybe I just don't like it. At this point I'm not throwing in the towel, I'll just...

    July 4th Smokeouts

Doing 3 Butts for pulled pork for the kid to take to work. Looks like I'll have to throw on a couple of Racks of St. Lou's on there also. Sounds like I may be dodging some off and on showers for a while.

Thanks for the input. I have a couple of recipes, just looking to see what people think is the best kind to start out with.

    Bush's Baked Beans

When using the Bush's Baked Beans for modified baked bean recipes is there a specific "flavor" of Bush's Baked Beans that you prefer? While at the store I noticed that they have several kinds. I guess it would be a trial and error type of deal. Any suggestions as to what you prefer?

    Question about Masterbuilt Gas Smokehouse

I am no expert however, I have the same smoker and went with the chunks rather than the chips. I also set a cast iron skillet on top of the factory wood pan. I also have used a larger water pan and have had excellant results with the smoke and the temps. Good Luck.

Thinking about stuffing pork loin with bratwurst sausage meat and sauerkraut.

I think it sounds great. We do not have any decent brats in this area. The best I have found are the Johnsonville Beer -n - Brats. I say go for it. When your done EMAIL me a taste ;)

    Chunk Storage

Thanks for the info. I will be keeping them in an outdoor shed. Sometimes there are temp swings from hot afternoons to cool evenings. About 1/2 mile from the shore so there is humidity.

    Chunk Storage

I have a couple of different boxes of Chunks. I would like to store the chunks in plastic bins. Should I store the chunks in the bins with the lid on tight or should I leave the tops off so they can breath? I did have some apple given to me that was in plastic garbage bags and it was wet and...

How long do you keep the smoke going?

Using a Masterbuilt Extra Wide. When doing long smokes like brisket and pork shoulders how long to you keep the smoke going. I read that the smoke is only absorbed into the meat for the first 3-4 hours. Is this true? How long do you keep adding the chips or chunks? And at what point do you...

Connecticut Barbecue is not necessarily a contradiction

Of course we can BBQ. Don't let anyone tell you differently. I will give the south credit for paving the way and teaching us a few things.
