    A Tale of Two Roasts

A couple of weeks ago, I was rooting around in the freezer, trying to figure out what to experiment with next. Lo and behold, I found 2 small roasts of beef, nearly identical in size - maybe 2 or 3 pounds each. I didn't know if they were chuck roasts, rump roasts, or whatever. I cruised the...

    1st attempt at chicken

My first attempt at chicken - reprinted from my blog. Well, last weekend I did an unscheduled cook of chicken. My family had been out and around running errands, and as we do, stopped for a bite to eat around 2:30 or 3:00. I knew that meant that we would be hungry again, in the evening, and I...

    Pastrami

So, since I had a free rack on the ProQ's maiden voyage this weekend, I decided to try pastrami after reading some threads about using corned beef. Since I had some in the freezer, I figured what the heck? Soaked it in water overnight. Changed water a couple of times. Hit it heavy in the...

    Checking in from Arizona

So new I haven't picked up the smoker yet! Been a freelance outdoor writer since High School. Of course, I have done the "backyard BBQ" thing, but am excited to get a smoker and learn some completely new things! As for my "bill-paying" job, I am a Facilities Manager with an AZ University.
