I have a 22 weber kettle and have modified it extensively with a Thermoworks control system and Cajun bandit smoker attachment.. for big parties I can do a lot of meat in that sucker. that said, i also have a 48 inch Blackstone flat top and it is very awesome. best of all worlds if you ask me...
I have both. The blackstone is better. The black and orange one with lid. The air fryer built in is awesome. It was hard to get. You have to watch your local walmart like a hawk. They come in and there are people literally camped out in the parking lot to snatch them up. Worth it in every way...

I forgot to add that the stacker has 2 grates and diffuser plate so you have 200% plus of the normal space you would have. I also have the ballistic griddle to cover all the bases.
I just recently got the signals and billows fan hooked up to my performer and couldnt be happier. I would say it would fill all your needs perfectly. No issues with range. I can monitor and adjust temp from anywhere.
actually and I don't know how but it turned out just fine. I just took it off a little early. Great reheated. Thanks for the recipe. Will do again with the right amount of flour. lol
