    Temperatures in the teens tonight. Not feeling confident in this little smoker's ability to hit 275. Does anyone have experience in this regard? I could put it in the garage but would prefer not to. Thanks.

    I've never scene (nor looked really) for beef cheeks.  Looks fabulous.  My favorite Mexican restaurant sell beef tongue tacos and they are incredible.

    Got two big roasts on the smoker for dinner tomorrow. Bringing them to pulled status. Question, is it better to leave the roasts whole and reheat tomorrow then pull or should I pull this evening? I would think the later might dry a bit. Or a third option, pull tomorrow then heat?

    A little different than RdKnB's post, I am thinking of doing a batch for a friends party late on Saturday. What would you do to hold/transport these? I was thinking about using a pre-heated crockpot. Smoke to party time probably two hours.

    I foil my families ribs as they prefer fall off the bone and not foil my rack because I prefer the pull. Extreme noobie who has not smoked a butt yet.

    2 pounds of smoked heaven. It got better reviews than the ribs. Hopefully because it was new to the crowd. I think most were expecting sauced ribs. I prefer dry.
