Coffee beans in with the wood chips, not a bad idea, but not something I would do every day.
The flavour was a bit bitter, and there was a hint of coffee flavour.
I think they turned out good, and I will do it again. Maybe with pork loin. I wouldn't do it with something sweet...
After some thought, I decided to try out the smoke before I put in the pork chops.
So I used about 1/4 c of coffee beans in with maple wood chips.
Smoke smelled very nice, I think it will work well.
I wouldn't use just coffee beans but with the wood it should work out well.

I saw this on a food network show.
A guy was smoking pork chops with Apple Wood chips and then about a 1/4 cut of coffee beans.
I think it is a great idea and I am going to try it on Sunday.
Anyone ever try this before?

Recently I tried to make a Hawaiian sausage.
Started with a Ham spice base and then added diced peppers, mozza cheese, and pineapple.
First time I tried it I used pineapple from a can, second time I used freeze dried pineapple.
I wanted to put them in a 18mm fibrous casing (pepperoni casing)...

You can absolutely use real rum as a substitue, but depending on the rum (how strong it is) you will probably want to add about 1/4 cup to get the same flavour as the rum extract.
Rum extract is pretty potent.
I also find if I add a couple ounzes of dark rum to some coke and water, it helps me...
I don't usually smoke them until they are falling off the bone because I am going to freeze them and then take them out and finish them weeks later.
If I was going to eat them right away I would smoke them longer.

Yes Run flavour is Rum Extract. It comes in a small bottle, about 1 ounze or so.
I add the whole bottle. You could use actual rum if you wanted to.
I use country style ribs, so there is more meat to soak in the flavour.

Apple Smoked Rum Pork Ribs
In a large marinader add wet brine ingredients, then mix in dry ingredients.
Tip - add hot water and honey first, and dissolve honey before adding anything else.

1 litre Apple Juice 1/2 cup liquid honey

Sprinkling onthe pepper work okay, but I find that if I lightly coat the bacon slab in pancake syrup, then roll it in a pepper mix the coating is even and stays on well through slicing and cooking.
Grind once with a large disk and once with a medium disk. I would have to check out in the shop for the exact sizes. Grinding it too fine can make it seem even dryer.
I add 1/3 ground pork trim to my deer for any sausage.
Tip - Grind the deer after the pork, it helps get some of the pork fat...
