Smoked a bottom round yesterday. 225 temp till 4 lb roast was 130. Took about 3 hours.
Let rest and then put in refrigerator till this evening.
Sliced the pit beef ten thin sliced onions. Made a white sauce and let it sit for 15 minutes.

Thinking about what to smoke this weekend and decided on Pit Beef.
This is a Baltimore thing, a roast beef style sandwich.
My plan is a smoked pit beef with white onions and tiger sauce and a side of fatty. I plan on slow smoking (hickory) boneless eye of round till about 120ish then opening...
1st chicken in UDS. I was pleased with the temp control and the overall outcome.
7 12 lbs roaster,
injected with cranberry and pomenade sugar free juice, butter mixed with rub under skin and evoo/rub on skin.
Placed in fridge for 4 hours.
275ish temp for 3 hrs then 300 for 1/2 HR. Cooked...
This sourdough bread is the best. Makes great french toast and is so good with just butter or jam. The recipes I used is from Piney, I believe. I got it many years ago and is my most requested bread.

Well the smoked corn beef turned out very good even after a few new lessons on my UDS.
After slicing wife grabbed a slice and said YUM. She then proceeded to keep taking slices. That is a ringing endorsement!

Smoking corned beef for pastrami sandwiches tomorrow. This is the first smoke in my UDS and I already am learning lessons, or making mistakes.
1st one is use less lump in chimney to start fire. I used to much and fire started way to hot (398) . I got it to hold a steady 340 - 345 with shutting...
I got the drum around 2013 or so. So after 9 years I finally built her. I have a few tweaks to do, but she is ready to smoke.
Tomorrow I will light her up to season here and figure out temps. Smoking a corn beef as I play with it and figure it out. That will be for a pastrami dinneron Wednesday.
I hope to finish my UDS tomorrow and do a test smoke. My question is I was thinking of putting caster wheel on the bottom, then I wondered if it would be too hot for the hard plastic wheels?
Any thoughts?
I am not new, but have been missing for a long while. I am glad to have time and start smoking more again. Finally building my UDS and can't wait to share some smokes
Wife found two 4. 3 pound shoulders on sale at Safeway so i decided to do pulled pork tomorrow. It has been forever since i last did one. Prep is done. Now tomorrow we smoke .
