I use a pampered chef easy accent cake decorator with the biggest tip on it to stuff ABT's and it's easier and much faster. I don't see why the jerky gun wouldn't work the same way.
I went to 160* and then put it in the oven, just on warm, while I fried some taters and waited for the pinto's to thicken. It was probably about 165* by the time we ate. Thanks for the comments, this place is awesome!

I so wish I could give you some pecan wood, or pecans, or the hulls the hateful little squirrels leave everywhere, or the green stuff they drop in the spring. ugh. I'm a little bitter toward pecan trees. It's got to be the most available wood here...and yet I almost never use it lol.
I just ordered some nectarine, peach, and pear wood, never used any of the three before and excited to try them. I also got some coffee wood coming out of pure curiosity, not sure what to expect there! I almost always use Jack Daniels oak barrel wood or Hickory...also LOVE alder wood for fish...

I've done a pre-sliced brisket one time...definitely like the whole ones better. I poured a sauce called Dale's Sauce all over it and let it sit and marinate a bit then did exactly like B8H8R suggested. It was good but I think it's just a lot harder to keep it moist
