I tossed the meat Dave, it did get to the 140 rule but it tasted bad because of no seasoning, very important lesson I learned but I just hate wasting meat!
Dave I am SOOOOOOOO DUMB!! I had a blonde moment I guess. Ihave been beating my head against the wall trying to figure out what I did wrong and I remembered. I forgot the seasoning and cure!!! So I pretty much was making a hamburger in a casing. Lesson learned I guess.

Joe I have looked up all type of grinders but I needed something that does more ppm and this one does twice what I used to do and cabelas just don't do enough ppm for me.
I used an old smokey heating element in mine and it works GREAT!! Here's a link for the element and the control.

I want to the local recycling plant and found a ton of oven racks. I love these because they are wider and longer than fridge/freezer racks and you can cut them to fit your smoker so you can get the fullest out of your racks. They did not charge me let me dig through them and gave me what I found.
Just replaced my Holbart A-200 Grinder with a much bigger Biro 722 Grinder just wanted to know if any one knows much about this Biro model like pro and cons? It has a 1hp motor and does 12-20 pounds of meat a minute so it will be better than my last one.
If my turkey is way done before before 3 pm when we want to eat what should I do, just foil it and reheat it when we're ready to eat or what would you do?
TJOHNSON I did pretty much what you did with your turkey, I hope it stalls out, I checked the breasts with a different thermometer and got the same temps, so I guess we'll wait and see what happens.
I put my 13# turkey in at 7:30 and it's now 9:15. The temp was 65 internal when I put the turkey in and it's already at 115 internal. Does this mean my turkey is going to be done by noon or does it take longer to finish or what. We're not eating tell 3:30 so I'd hate to have this just sitting...
How long on an average does it take to cook a turkey and what temp is a good temp to cook it at. Also if you've got a good recipe please share and if there's a rub or not. I've never done a turkey so I kinda need to know when to start it so it's done by 3 pm. Thanks Tim
