decent sized t-bone for a hy-vee $10 sale. I was aiming for a nice pink middle at 154 but the cold wind kept driving my smoker temp down (200/225) so it increased the smoke time, and i pulled it right at 154.

if you take your own wood you most likely know what you have.
but if you go next door to your friends camp and roast hot dogs or what ever over there fire with wood that you dont know, is there a danger in that, no not really as your using the heat and not the smoke of an open fire to cook...
