    I was at BBQ in Waimea on the big Island Hawaii, great food by the way I was able to ask the pit master some questions and he mentioned that he cold smoked his pork butt and brisket for a few hours before starting the heat.     when to use water in drip pan or not?

    I have a MES, when would I not use water in the drip pan? I though you should always use some kind of fluid in it to help to keep from dry out the meat? Our when should I use it? Thanks Richard V
