I just got a shipment in from WICKERS (incredible sauce and marinade) so I injected with a good amount of marinade
took it up to 140 then...
heres some shots of our thanksgiving ham and turkey I know its late but thats just how it is
started off with some pecans heavily coated with butter, cayenne pepper and brown sugar with a touch of allspice for some holiday flavor
now thats a HAPPY smoker!!!

Doing some yardwork today with the pup and of course we need some snacks while we work
going to start with some shrim, scallop, pepper,sausage,onion, jalapeno and tomato mixture soaking in a real tasty Key West Hot Sauce
Next up is a salmon steak soaking in that same hot sauce marinade...
made a little pork while i was outside painting yesterday
falling apart quite nicely, pulled the bone right out
a twelve hour smoke , started at eleven last night,
all shredded up and ready for some finishing sauce
my trusty assistant is supervising the painting
added some soflquer...

Gonna smoke it and do a little variation of the "Beer Can Chicken"
I'm inserting the beer can in the middle for two reasons, one to help it stay erect, two imm filling it with Mojo to add a little extra spanish flavor to the pork
It is rubbed down with some spices...

try to roll out the dough thick in the middle and thin for the flaps
first layer is stuffing
next some green bean casserrole
of course a layer of smoked turkey
then top with gravy...
got a couple different turkeys going for the crowd today
first is a Jerk seasoned 16 lb turkey, with a jerk injection then covered with some hot jerk seasoning
Next is a nice sweet 14 lb turkey injected with some butter sauce with added mollases then covered with a savory turkey seasoning...
Had a few pals over for the game and made a few bacon treats for the game
Started out with a 6lb brisket

These are bacon cups filled with hamburger and topped with american cheese
Bake em first in the oven to get the bacon...
Had a couple fellas over for the start of college ball yesterday

one biscuit down with a layer of turkey, then some green bean casserole

Had our usual gathering of family and friends, did a ham and a turkey this year
