    Wow, that took a lot longer than i thought it would. Just pulled the meat off the smoker and now it is resting. Going to take a shower (been out in the sun sweating all day) and then pull the pork. All I can think of is bed right now as I have to be up at 5am to go to work

    Turkey came out a little drier than last time. Not real sure what I did different. Spent a good hour last night vacuum sealing the leftovers and putting some in the freezer. Overall it turned out pretty good.

    yes, its surely a big bird. The last time I smoked a turkey it was only about 14lbs. Im smoking this one at about 325 until it gets out of the danger zone then I will reduce it to about 225 for the rest of the smoke. I didnt feel like spatchcocking, the reason for the high temp to begin with...

    I think they were on about 3 1/2 hours or so. Not real sure though. I had a rack of pork spares above them and they finished about the same time
