    UDS Mk. II

Well, my first UDS proved to work fantastic and just so happened, I had one more drum that was ready to go...just needed to put things together. A good friend of mine got bit by the smoking bug last summer hanging out with me at our cabin, but didn't want to buy an ECB or SnP and doesn't really...

    UDS mk. 1

I've been eyeing the ugly drum smokers for quite awhile, but never pulled the trigger since I have a WSM at home and my home-built one at our lake cabin.  However, trips to the lake last summer showed me that my home-built was a little bit small when I was cooking for 10+ people.  We don't have...

Big cookout for folks 40th anniversary.

My parents celebrated their 40th year together over the weekend of Sept. 17th, so the wife and I decided to throw them a party to honor them for their commitment to one another. I was in charge of the meat and beans. The Briskets weighed in at 13lbs each untrimmed. I love briskets... ..too...

    Brisket dinner

The brisket was great. Tender, juicy, no complaints at all. Amy's (my wife) choir had their last concert tonight, so we had the family over for a little Sunday dinner... Being from KC, everybody seems to favor KC style sauce, so, just to mix things up, I made up some different BBQ sauces from...

    Dinner fatty and sides

Decided to do a quick dinner smoke...a fatty and some sides... Saute'ed (?) some mushrooms, onions and peppers for the fatty. rolled it all up into a log with some cream cheese... put it on the smoker with some abt's, sausage snacks, some foiled asparagus and a sweet potato. We'll see how...

Finally, a day to really try out my new WSM.

I wasn't sure where to put this since I'm cooking 2 equal sized pieces of meat, so general it goes.  We really need just a general "Smoke Day" forum for times like these.  I've only been able to smoke chicken, pork chops and side dishes.  Finally a weekend to smoke some real meat...even though...

    Maiden Voyage (WSM)

I ordered a Weber Smokey Mountain smoker last week. It arrived today. I knew it was coming, so I was anxious to get off work all day...then I remembered, dentist appointment. That got me home about 1 1/2 hours later than I had anticipated....but I would not be deterred. It was a snap to...

One of the best things about smoking a lot of food is...

...enjoying the "planned" overs all week long.

Send off for an old friend (smoker, not person)

I wasn't sure where this should go...but considering the chuckie is my first one, it's the star of the show...so...beef it it. :-) Had a beautiful day here in KC. After spring cleaning of the yard, I thought I'd smoke some food as a little send off to my trustworthy Smoke'N Pit.  My WSM should...

    Took the winter off...

...from smoking.  I cooked some holiday meat of course, but for the most part, no smoking was done this winter.   This past fall, my parents deeded the family cabin to Amy and I.  My Grandpa built the place in the 50's, and other than a fresh coat of paint here and there, it had remained...

Forth of July weekend baby back smoke

I built a small smoker over the winter for our cabin at the lake of the Ozarks.  While I had tested it a few times on small things, burgers, brauts, fatties, chicken pieces, abt's, I'd never did a long smoke.  We had nine people going this weekend, 4 adults and 5 teenagers, we figured we'd...

    Time for change...

When we first built our home we didn't know much about gardening, so we planted just about anything in our side garden. Over the years, our indiscretion caught up with us. It was truly getting unruly and IMO unsightly. Also, we were experiencing a good amount of settling at the foundation.  So...

    OK, now what? (sourdough)

I love sourdough bread.  I'd attempted to grow a couple of starters over the years with no luck.  After reading through all the threads here, I decided to give it another go.  One of the threads led me to the pineapple juice method.  I didn't have any pineapple juice, but we did have some...

    Rueben fatty...delicious

After what was the longest winter we've had in years here in KC, it's finally nice enough to spend some time by the smoker (I know, I'm a fair weather fan). Although I did do a couple of smokes on the nicer winter days, it just wasn't as enjoyable as it is in the other seasons. I've seen...

    English Arm Roast?

My wife found an English Arm Roast for sale the other day...but I cannot find any info on it as to what cut of meat it is. It doesn't look like any English Roasts I've found pictures of online. Is it just a fancy name for a regular arm roast??

    Building a fatty...

Went to the store tonight and they had some Italian sausage on sale...I just couldn't resist. The boss was home to document the play by play. ..topped with roasted peppers, poblano, red and jalapeno... ...gotta have some cheese. Cheddar this go around. ...rollin it up. ...profile view...

    Home built smoker idea thread

I wasn't really sure where to put this, charcoal forum, wood burner forum...so I decided to go with the catch all forum. I've got a welder, some cutting tools (no torch though) and some know how...although, I normally find I know enough to get myself into trouble. After discovering how much...

    Smoked Chicken Breasts

For dinner tonight, I smoked some chicken breasts, ABT's and green beans. Just the basics, marinated chicken, cream cheese jalapeno's, beans...all with bacon of course. ...before ...after ...notice the beans didn't make the after shot...they looked good, but I should have blanched them...

    Spare ribs....first time

My wife (Amy) found some spare ribs on sale for a buck a pound. This was my first time smoking ribs, so needless to say, I was a bit nervous. A couple thoughts...the membrane is a bit of a bitch to peel off...the skirts and tip make pretty good snackin's...the brisket rib was not good (ended...
