    Butt question?

I have a Brinkmann Smoke 'N Grill smoker with a sfb so I just sit it with the fat side down. I don't flip it, rotate it, or move it in any way. When done, if any fat pulls off as I pull it off the smoker I don't lose any meat.

I've noticed a huge difference in maintaining temps. If I get some time later tonight I'll snap some pics of the mods so far.

    Misc SNP/Smoking Questions/Profound Thoughts

The only thing I use the grates in the firebox is for putting the wood chunks to rest as to let them smolder instead of burning up on the charcoal/ lump. You will need to fabricate a basket or a charcoal grate as wih the stock grate any long smoke (constant heat) will bend your stock grate...

Firt impression from using my WSM 22"

Ok, I'm with Placebo, I think you and Chisoxjim are getting kickbacks from Weber as I too am looking into the WSM. I just have a couple of ?'s, are there any mods that need to get done in order to get those loooong smoke times? Is the stock therm fairly accurate? I might be laying off my...

Doot Doot Doot, Lookin' Out My Back Door!

We were a few degrees shy of 70 degrees yesterday here in Chicago. Now there's a blanket of snow on the ground and temps around 30 or so. But that's nothing new here. Like they say , if you don't like the weather just wait 5 minutes!

Lechon.... now your talking my language. We do those in Puerto Rico as well. My father has a 55 gal drum with a homemade set up and makes some awesome pork butt/ pork shoulder. The trick is to cook it in an indirect heat setting. He has coals lined up in the front ond back of the 55 gal drum...

    couple of questions

I think we both have the same smoker and I did the following mods.... I went to Menards and bought an aluminum clothes dryer vent and I lowered the exhaust pipe all the way down to the grate. I also picked up a fireplace/ stove heat rope to seal the sides of the smoker. I had at least a 1/4...

    Second time smoking ribs

Yes this thing is begging for a few mods. First off I made a new charcoal grate because the one that it comes with is garbage. Then I extended the exhaust down to grate level. Next I will be working on maybe installing the fire rope around the lid (there's probably 1/4" gap all the way...
