    Successful first Jerky

Hey Pignlt, I like that rack and tooth pick method. I will try that next time. I've been eating so much of this Jerky my teeth are killing me. Its not tough or anything, I just have girly teeth or something. I will try to post a pic of the finished Jerky but I'm at a state park in Destin FL with...

    Weekend pulled pork

Once it was all mixed up it was perfect, it was only salty when I was picking at it before i pulled it. I was just use to my rub that's less salty and more sweet. The Salt Lick rub has a really nice kick to it too, I cant wait to try it on some ribs.

    Successful first Jerky

Made my first attempt at Jerky last night. I used London Broil and Hi Mountain cure. I cut the meat about 1/4 inch with the grain and let it cure for about 30 hours (was going for 24 hours but it wouldn't stop raining). Put it in the smoker at 6:00 pm at about 175 deg for about 4 hours till the...

    Weekend pulled pork

Smoked a butt for some pulled pork this weekend. I always use my own rub for my pork, but this time I used some rub I bought from the Salt Lick in when I was in Austin last week. Rubbed it the night before and put in the smoker at 6:30 am. At about 3:00 pm it hit 170 deg so I wrapped it in foil...

Funny that's what I was thinking, but we are staying at a state park in Austin TX. and they are everywhere. Some times there are about 20 or 30 of them around our rv.

    Smoked Beer Can Chicken

Smoked a beer can chicken yesterday with a poultry rub on and under the skin, and used apple and hickory for smoke. The chicken took longer then I thought, maybe because of the beer. I cooked it at about 275 deg. for 5 hours and about a hour and a half before it was done I put on some corn...
