my grill is a mess. its got old drippings and sh** all along the bottom and tends to draw flies and cockroaches and other critters when its not being used. it sits sometimes weeks at a time. anyway my question is... is it okay to use easy-off or something similar or should i just get in there...

its a side box chargriller. and , yea, thats what im hoping for. im just gonna maintain 230 and wrap it at 165 and then when it reaches 200 ,into the cooler it goes for about an hour. hopefully it will turn out okay.
thanks for the advise. i dont have a grate temp reading. all i got is the cheapy ambiant temp located at the top of grill. if it reads 250 about what temp do you think the grate temp is(that IS what im supposed to go by right?). thanks
i got a 5 1/2 butt on the smoker now. i started it at 8:45 am and its 11:50 now and internally is 140 degrees already. my goal is 190 or so for pulled pork sammiches later. do yall think its okay or do i need to turn the heat down a bit. i was keeping it around 280-300degrees from the start. it...
reaching 195 degrees in 16 degree weather is quite an accomplishment but doing it in 51/2 hours in hard for me to believe. right now i got a 4 lb butt on the grill and its been there since 8:oo am and its now 6:00 pm and its only at 175 dgrees. granted im in florida and its 56 degree outside...
i didnt take my butts out of the fridge to knock the chill off. they went straight to the smoker. my question is how much time did i just add on to the cook time by doing this.
no im smoking for two hrs and then wrappin 'em for two hrs but i was asking if i had to wrap them for the last two hrs or if i can get away with just spritz'n them instead.

one other question.- during the smoking time i was noticing that i had some gray/black...
im cooking these ribs today and was going to spritz them with applejuice every 45 min, do i still need to wrap them for two hrs after smoke for 2 hrs??
