Because of unforeseen circumstances last weekend....I was unable to smoke the chuckie I had prepared last saturday night. so...is 7 days in the fridge all rubbed up too long. Is it safe to eat? It smells ok but I'm not sure what to do. HELP please

I was talking about after removing it from the smoker. I have always put it in a zip lock baggie or foodsaver if I was freezing some. I read in an old post that the guy puts it in a paper sack. Just didn't know if I was missing something??

After I take my jerky out... I assume it should sit on the counter for awhile?? I've also read through some old posts that say to place the jerky in a paper sack for storage. Why is that?

WOW... excellent info in these posts. Thanks. Looks like I'll go with the AMNPS... The main reason I want to try it is I'm looking for more smoke flavor out of my gosm bb.
Not trying to hi jack the thread but... can Todd or someone explain the pros and cons of the original compared to the pellet smoker. Whats better and why. I'm in the market just trying to figure out what to go with.

Great job on the smoke..the abt's look awesome. I have the same smoker...next time you might try cutting your ribs up St. Louis style. They will fit better and you and your guests will enjoy that cut of rib a little better imo.
