    Always, always, always write down what ingredients you used and how you made something. Start a BBQ notebook and keep detailed notes on everything, losing recipes like that sucks....

    20 lb shoulder

    I would split it, like others have said it is not going to affect the finished product. It will however speed up the cooking time as you will be dealing with two 10lb pieces of meat instead of one monster 20lb piece. This will make it easier to get through the 140 danger zone within 4 hours.

    The chargriller assembly experience is entirely subjective. I purchased and assembled it recently. I did have a few issues with the knockout, I overcame this problem by grinding away part of the spot welds with a dremel; problem solved with nothing destroyed. For the money I am extremely happy...
