    Sear this brisket or not? (photo attached)

    Doing some smoking this weekend. I've made a few briskets before but never with a sear. This brisket is about 6.5 pounds and has a nice layer (1/4" or better) of fat. Trying to decide whether to sear and would appreciate any thoughts.

    Just ordered a brisket for the weekend and had planned on smoking with hickory chucks. Of course, my local supplier is out. I do have a good supply of very dry white oak firewood and a bandsaw. Will white oak work to do a brisket or should I go with hickory chips? Thanks!
