    Thanks for the advice, Ron. Leaning toward searing, I hope this one isn't too small. By the way, I know Minocqua well, have spent a little time at the Thirsty Whale. Also looking forward to the Public Enemies/Johnny Depp movie with the Little Bohemia/Manitowish Waters scenes.

    Doing some smoking this weekend. I've made a few briskets before but never with a sear. This brisket is about 6.5 pounds and has a nice layer (1/4" or better) of fat. Trying to decide whether to sear and would appreciate any thoughts.

    Thanks to everyone for the advice. Just picked up a 6.5 pound brisket and will be spending some quality time with my bandsaw tomorrow night. I'm thinking I'll cut 2" chunks. Sound about right? Will post some pics when the brisket is finished.

    Just ordered a brisket for the weekend and had planned on smoking with hickory chucks. Of course, my local supplier is out. I do have a good supply of very dry white oak firewood and a bandsaw. Will white oak work to do a brisket or should I go with hickory chips? Thanks!

    Starting on the process of modifying my offset Pitmaster smoker. It's been awhile since I've used and somehow all the grates are missing. I'll definitely use expanded metal for the firebox grate. Has anyone used it for the top grate in with the main chamber?
