The Louisiana vertical was a little slow going this morning at 7 degrees. The auger did nor want to move. Gave it a little tap and all good. Sounded bad until it warmed up a little. Getting ready for a tri tip.
Made pastor tacos today. Loved the turkey hanger/stand I got. Worked great. Sliced the pork 1/4" thick. Blended the marinade and let it sit 24 hrs. Smoked at 275 for about 7 hrs. Corn tortillas,onion,cilantro and limes. Keep them simple.
First batch of the season. Some Dublinger,Tillamook medium cheddar,Gouda, Black creek chedder, sharp chedder,Swiss, and cheddar jack. 3 hrs with apple pellets. Now to rest and vac seal.
Inkbird you have been holding out on us. Just found this I did not know you made one of these. Unless I just misted it. Would like to here more about it..
Currently we have canned 36 pints of salsa. Should be able to get 24 more if I could just find lids or even jars. I have jars just need lids. All stores are out here. Anyone else having a hard time getting supplies.
With everyone else doing these it really made me want to try it. Smoker getting to temp. Roast seasoned and ready to go on. It is just over 3 lbs. Trying a new rub as well. I added some more black pepper.
Pulled the point out of the freezer from a previous cook. Got it ready for a 3 hour smoke. Cubed and more rub added. After two and half hours I added some sauce. All done.
Just some thighs for dinner. Got to keep myself occupied. Seems I will be working from home until the 23rd. Hope it is not that long. Wife may get tired of everything being smoked.
Since I was home I did a small cheese smoke. This is my first cheese smoke. Smoked two hours with apple pellets. Was able to keep the temp right a 60 degrees. Smoked a sharp cheddar, medium cheddar, swiss,peperjack, and horseradish cheddar. Now the hard part. All wrapped up and in the...
Just put a 13 lb brisket on my new smoker. Using Lumberjack 100% hickory with charhickory mixed in. Hope it all goes well. Been smoking for years with a MES 40.
I wanted to try buckboard back so I thawed out two butts and jumped in feet first.
Here the are deboned. It was easier then I thought it would be.
All spiced up with TQ, garlic,brown suger, CBP, and oinon powder.
Ready for the 10 day wait. I turned over on day five.

Just got the ad today. Jan 14-24 Cabela's will have the 40" MES with window (model 02881180) for $329.99. Not sure if this is the new model or not. I know that the one in the Kansas City store had the removeable back panel. This might be an option for someone that needs one before Sam's gets...
