I have the same smoker. I do not use the stock pan at all. I use a large disposable aluminum pan. Also I don't put it on the lowest spot I moved it up a little seems to get better temps that match close to the controller.
Had it in Dec. My smell and taste is still not 100%. I use to have a very sensitive nose and taste but not anymore. There are some things that I can not smell at all and others smell off. At this point I don't think it will fully come back.
The Louisiana vertical was a little slow going this morning at 7 degrees. The auger did nor want to move. Gave it a little tap and all good. Sounded bad until it warmed up a little. Getting ready for a tri tip.
Pit boss and Louisiana grills are owed by the same company. So they are the same except minor differences. I have the Louisiana I like it . It is the same as the pit boss 7 series. The only difference is the Louisiana has two latchs vs one on the pit boss. It tolds a ton of meat.
