What are you doing this holiday weekend?

Picked up a 6 lb chicken & will be trying my first beer can chicken on my 16" Horizon. I might have to move the grates around to get it to fit.

    The flavor of Lamb?

Lamb is good stuff. I'll take it whenever I can get it. What you might try to do just to see if you like it, without spending all kinds of bucks for a lamb roast, is to get some lamb chops. Wrap these chops with a strip of bacon, season them with CPB, sea salt & garlic powder, then stick them...

WOOHOO! I LOVE THE NEW FORUM!!

My avatar on the old forum was a gif & now is just an image. Is this something I need to reload or will gif's be available to use at all? Also, is there a setting to view more than 10 responses per page on any particular thread? I think I had the old one set at 20 per page.  Thanks Jeff. Things...

What was supposed to be a short smoke... Qveiw

Thanks, it pulled real easy with a pair of forks. The mesquite came out perfect for my taste. Not overpowering at all.

What was supposed to be a short smoke... Qveiw

Well anyway, the best laid plans... I pulled out a small 3 1/2 to 4 lb pork roast out & figured I would have a nice afternoon smoke. At 1.5 hours per pound I figured I would be done for dinner enjoying some pulled pork sammies. Oh well. Here it is after the rub & on the smoker at 225° with...

    How many us hunt ??

You forgot handgun as an option. I was drawn for elk this year after about eight years since last drawn. I will be packing a Remington 721 30-06 Ackley Improved & also a Ruger Super Redhawk in .44 Mag w/ a Nikon 2x. If I can get close enough, I would love to take one with a handgun.

    Smoked Catfish Filets - Qview

Thanks. Fish will cook up fairly quickly so it went fairly fast on the smoker. After the first half hour I flipped them over & moved them toward the heat. Turned out great - moist & tender. Only just a little over an hours time total cooking time.

    Smoked Catfish Filets - Qview

Pulled a couple of catfish filets out of the freezer & decided to try to give them a smoke. Once thawed I dried them on some paper towels & hit them with Tony Chachere's seasoning. Here they are ready for the smoker... I started them out for the first half hour or so at about 200° with some...

This weekend looks kinda busy but, if I can find the time I think I'll throw a pork butt on the new Horizon.

New Horizon - First Long Smoke w/qveiw

Picked up a Horizon 16" Classic a short while back & only had a chance to cook up some brats & a couple pork chops. Today I broke it in with a rack of pork loin ribs. Here's the ribs after pulling the membrane, hitting it with the rub & just in the smoker... Got the fire going to a temp...

    Woods For Smoking

I understand that Ash is an acceptable wood to use but does that apply to all varieties of Ash? I have a big ol' Evergreen Ash in my backyard & occasionally trim it back to open it up & to keep the limbs off the house. Has anyone used Evergreen Ash? Here is a pic of one of the cuttings with a...
