I am planning to add additional grates to my OSFB and was curious if there was a formula for how much height the first cooking grate should be from the bottom of the cooking chamber to ensure unrestricted air and smoke flow ? Would 2" be too low or should it be higher.

The minimum I would plan for 15 adults is about 10#'s precooked weight.

I double wrap in HD foil @135-137 and the carry over temp swings it to almost 145-48 after sitting in a turned off pre-heated oven.
