    Smoking Chicken Breasts, problems

I find that cooking pieces of poultry do better at a higher temp than 215-225. Would suggest you try around 275 -300. I usually use my grill and indirect cooking with chips and small chunks. I also brine for about 12 hrs instead 24 hrs to eliminate too much saltiness to the taste. I also pull at...

    OFB rack modifications

I am planning to add additional grates to my OSFB and was curious if there was a formula for how much height the first cooking grate should be from the bottom of the cooking chamber to ensure unrestricted air and smoke flow ? Would 2" be too low or should it be higher. TIA Jack~

    Question on quantities and timing

The minimum I would plan for 15 adults is about 10#'s precooked weight. Thats an estimate of about 1/3 # per person or 1 # per 3 people. I always plan to have an abundance so I would probably look for 2, 6-7 # butts. I plan 2 hrs per # at least for actual smoking time,, 1 hr prep time, and at...

Need some creative and feasible ideas

Please give me some practicle advice and suggestions on reworking this very neglected critter.I am searching for a trailered smoker and ran across this ad. I do not own any welding equipment so any mods would have to be done elsewhere. In your opinion, would the rebuild be worth it or not...

    Considering adding a BGE

My '02 worth from prior experience. The Kamado works as well and in many instances better than the BGE. For grilling the BGE can out perform but only slightly. For smoking, the Kamodo is a more efficient system and uses less fuel. Both should not be left out nor used in winter conditions. Both...

    Need Turkey Help

A 24 lb turkey is a bit on the high side of getting good results from smoking. Would suggest gettin that critter down to size with 2 12lb pieces. Definitely brine them and a good rub will make you a hero for sure. Hickory and apple or any good fruitwood works wonders on turkey or chicken/ A...

    Kenmore vs GOSM?

Have had a Kenmore for 2 + years or so. It has done quite well IMO for its price point. Have used it all seasons. When below 40F, I throw a heavy furniture pad over it and it does fine. Wind is my only nemesis. The magnetic door works ok but it still leaks, but not excessively. Picked up a...

Injection ? for sirloin tip roast

I double wrap in HD foil @135-137 and the carry over temp swings it to almost 145-48 after sitting in a turned off pre-heated oven. I am most cautious to be above 140. Was seeing if any one was successful with injecting this cut of roast. Thank you for your reply, Jack~
